Recipe of the Day: Cajun Mixed Veggies


Ingredients

  • 2 (10 ounce) packages frozen chopped broccoli, thawed
  • 2 cups fresh green beans, trimmed
  • 1/4 cup butter
  • 2 cups sliced fresh mushrooms
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons extra virgin coconut oil
Directions
  1. Bring a large pot of water to a boil; add broccoli and green beans. Simmer until vegetables are just tender, but still crunch, about 5 minutes. Drain.

  2. Melt butter in a large skillet over medium heat; cook and stir mushrooms until they begin to soften, about 1 minute. Continue to cook and stir until heated through, about 1 minute more. 

  3. Stir broccoli and green beans into mushroom mixture; season with Cajun seasoning and toss with melted coconut oil.
