Recipe of the Day: Zucchini Bread Muffins | | Ingredients
2 large Eggs (Whole)
2 teaspoons Extra Virgin Coconut Oil
1 teaspoon Vanilla Extract
3/4 cup Zucchini
1 cup Organic Golden Flaxseed Meal
1/4 cup SANE Clean Whey Protein
1/2 teaspoon vanilla extract
1/3 cup Xylitol or Erythritol (optional)
1 1/2 teaspoons Cinnamon
3/4 teaspoon Baking Powder
1/4 teaspoon Salt
1/8 teaspoon Allspice Ground
1/8 teaspoon Nutmeg (Ground) Directions Preheat an oven to 350°F. Grease 6 wells of a standard non-stick muffin tin.
Combine the eggs, oil and vanilla in a small bowl. Using a whisk beat until frothy about 1 minute. Add the shredded zucchini. Add the flax meal, SANE Clean Whey Protein, vanilla extract, xylitol, baking powder, salt, and spices. Mix with a spoon to combine.
