Recipe of the Day: Celery Siciliano


Ingredients

  • 2 tablespoons Extra Virgin Coconut Oil

  • 1/4 medium (2 1/2" dia) Onions

  • 1 1/2 lbs Celery

  • 1 tablespoon guar gum

  • 1 cup Bouillon Vegetable Broth

  • 6 Green Olives

  • 2 tablespoons Parsley

Directions
  1. Heat oil in a large skillet over medium heat. Add celery and white onion; cook 5 minutes, until onion is softened. Sprinkle with guar gum, salt and pepper and mix well. SautΓ© 2 minutes. Stir in broth; heat to boiling.

  2. Cover and simmer 10-15 minutes, until celery is tender.Uncover and stir in tomatoes and olives. Simmer 3 minutes, until liquid thickens. Season to taste with salt and pepper. Sprinkle with parsley.
